Waffle Hash Browns with Rosemary & Apple

When I first saw this waffle has brown recipe, I ordered a waffle iron! I knew I had to make my own version of these. My mind immediately went to a take on latkes. The original recipe only called for rosemary Рyou can read it here. I added a shredded apple to give it a little sweet pop Рyum!!

After a few trial and error batches, I finally got it just right! It is a flavor explosion in you mouth. I served it up with sour cream, apple slices and a sprinkling of crispy pan fried pancetta!

Ingredients
  • 1 - 20 ounce Bag of Shredded Hash Browns In the freezer section
  • 1 bunch Fresh Rosemary
  • 1 medium Apple of choice - I used a red Fuji
  • 1 spray Olive Oil or Butter
  • 1 tspn Salt
  • 1 Pepper to taste

  1. In the original recipe from Will it Waffle - they took the time to grate fresh potatoes to make their waffle hash browns. Me, I ain't got time for that. Grating potatoes is a biatch! I used fresh cut potato shreds aka hash browns. They are located in the freezer section - usually close to the eggs. They are cheap and exactly what you would get if you shredded them yourself.

  2. Now it's time to chop! Remove the stems from your rosemary and chop. Cut the apples into quarters and remove the core with a paring knife.

  3. Turn on your waffle iron to a medium high setting - don't turn it all the up. I find that this will make it too crispy in some areas.
  4. Open the hash browns and put into a large mixing bowl. Grab a cheese grater - shred the apple into the mixing bowl. Start at the end - not in the middle. You are going to grate the peel in as well. Thoroughly mix everything together.

  5. Melt your butter and use a silicone brush to grease your waffle iron. I slathered it on!
  6. Place about a quarter of the mixture onto your waffle iron. I used an 8" waffle iron. You will get 4 nice sized hash browns. If your waffle iron is bigger - just use 8" of it. These are nice size and could easily be cut in half to make two servings.

  7. Close the waffle iron and gently push down. I made the mistake of pushing too hard and broke the handle off my little cheap waffle iron - whoopsie! The next time I used an oven mitt to press on the top of the waffle iron.
  8. Cook for 5 minutes and press down again. These take about 10 minutes to cook. I like my extra crispity (yes, I know that's misspelled) Start checking around the 8 minute mark to see if it's time to remove. You want to make sure that it has cooked enough so that it will stay together.
  9. Removing thee babies are a little tricky. With a spatula/turner - lift up the edge and gently insert under the hash brown. Rock it up and down a little to lift it from the waffle iron. Once you get it going it's easy to remove.
  10. These waffle hash browns take a minute to cook. I threw these on a pizza pan and kept them warm in the oven. I would def recommend making these first and then making anything else. I heated the oven up to 350 - placed all 4 waffle hash browns in the oven for another 8 minutes and then turned the oven off. When I was ready to serve - I just grabbed them out of the oven. Nice and hot!
  11. I served these up with apple slices and sour cream with a sprinkle of crispy pancetta. It was like a tasty textured latke! This is a meal in and of itself.

  12. Just a quick tip - heat up your apples in the microwave. This brings out the sweetness of the apple which pairs nicely with the waffle hash brown and sour cream. Also, you can substitute bacon if you can't find pancetta.

Waffle has browns are gonna be a regular at my house. After writing this post - I am craving them again!
