Tomato Meets Cucumber Chicken Salad – Paleo Friendly Recipes

A tomato and a cucumber walk into a bar. What did the chicken say to them? I’d like to toss your salad! Okay, okay! I am not a comedian. (or am I?)

Ever have those days you want to eat a healthy dinner? No, you must eat healthy! (you had the enchiladas for lunch & chips and salsa) Then you realize that you are a little lazy and don’t want to cook? Yeah? Meee too!

This is my lazy day healthy dinner (or lunch). It’s fast, fresh, and tasty! My husband is picky eater – chicken fingers vs chicken nuggets? Apparently, there is a distinct flavor profile difference. (really?!) I have a whole list of no no ingredients. Lucky for me none these are in this recipe.

Ingredients
  • 1/2 Pint Red cherry tomatoes You can use 1 kind.
  • 1/2 Pint Yellow cherry tomatoes I like the color of two.
  • 2 Medium Cucumbers
  • 1 Large Lemon
  • 1/4 cup olive oil
  • 1/4 cup Parmesan cheese
  • 1 large Lemon
  • 10 Chicken Tenderloins A large package.
  • Salt & Pepper to taste

  1. Cut your cherry tomatoes in half - add them to a big salad bowl.

  2. Take a potato peeler and remove the skin of the cucumber. I like to leave a little of the skin on. Peel a section - then leave a section unpeeled. Don't worry it doesn't have to be perfect. Cut in half. Then cut in half again. Slice the quarters into 1/4" triangles. Add to the salad bowl.

  3. Add salt and pepper to taste. If you are unsure add a tspn of salt and a 1/2 tspn of pepper. You can always add more.
  4. Add the olive oil.
  5. Cut your lemon in half. Use a lemon squeezer to get all the juice out of the lemon. I squeeze it directly into the salad. If you don't have one - you can squeeze by hand. You might need another lemon. Also, be mindful of the seeds. Seriously, you need a lemon squeezer!

  6. Add parmesan cheese. If you are a paleo eater you can skip this part.

  7. Cook your chicken tenderloins. I prefer the grill, however, the cook jus fine in the oven. If you are grilling - place the chicken in a baking pan. Pour 1/4 cup of olive oil onto the chicken tenderloins and mix. Make sure the olive oil has thoroughly coated your chicken. This will help keep it from sticking to the grill. Now let's season - I seasoned mine with Cavendars Greek Seasoning and a little bit of Slap Ya Mamma Seasoning for some spice. A little goes a long way. You can just use salt and pepper - Ain't nothing wrong with keepin it simple. Throw on the grill. Cook on one side for 5 minutes. Let it get a good sear. Take a grill turner (I call it a spatula) and firmly scrape underneath the tenderloin. You will probably get a little sticking action even with the olive oil. Flip and cook for another 5. They cook super fast. They are done when they chicken is firm (but not too firm. It is a delicate dance. You want it thoroughly cooked without being overcooked - that's when it gets dry!!
  8. Toss the salad. Yes, that's right, toss the salad! Serve in big white bowls. Add chicken to the top. Serve it up!
