Let’s just get this out of the way. Frittata is a fantastic word. I mean, it  has TATA’s!! If frittata was a person, she would be a sexy french lady with mysterious eyes and a laugh that would bring all the boys to the yard – damn right. Okay, I feel better, now let’s get on with my Super Sexy Monday Frittata Recipe. (It’s super sexy ‘cuz it has TATA’s in it!)

I spend a lot of my time making other people food. It’s just what I do. (most of the time I looove it) There is a small drawback to this – I am always the last to eat. Oh, aaand I am always accommodating other peoples taste buds. At least once a week (sometimes two or three times) I make myself a delicious breakfast. I go all out. I make it for me – no one else gets a bite. One of my faves is my frittata recipe.

Ingredients
  • 2-3 medium eggs How hungry are you?
  • 1 tspn hot sauce
  • 1 tbspn milk or creamer optional
  • 1-2 pinches Salt & Pepper to taste
  • 1 Handfull cherry tomoatoes cut in half
  • 1 Handfull baby spinach
  • 2 strips crumbled bacon
  • 1 pinch Parmesan cheese optional

Instructions
  1. Add your eggs, hot sauce, milk/creamer, salt & pepper to a medium sized bowl. Beat for about a minute with an egg beater. You want everything to be nice and even.
  2. Heat your stove top on medium. I like to use a small skillet about 10" in diameter. This will keep everything nice and snug. Add a tspn of olive oil and let the skillet heat up for about 30 seconds. You don't want it too hot.
  3. Pour your egg mixture evenly into the skillet. Let it cook for about 30 seconds. VIP: Using a spatula or turner, gently start pulling the edges back from the sides of the skillet. The egg mixture should fill in where you pulled back form the skillet. This is important because it allows all the egg mixture to cook on top. You don't want a runny frittata top!
  4. Once the mixture has cooked for about 90 seconds add your spinach followed by the cherry tomato halves and then the bacon crumbles. Let cook until the spinach begins to wilt.
  5. If I am filling crazy, I will add a little parmesan cheese right before I remove it from the pan. The taste is awesome without it, however, I love cheese and do indulge from time to time.
  6. I like to fold the frittata in two with my spatula/turner so I can remove it from the pan. If you try to remove it as a flat piece you risk your frittata breaking into a pieces. I like it to look pretty when I eat it. Makes me feel like the cook cared about MY experience.
