I have a love hate relationship with macaroni and cheese. It’s rare to find a place that has creamy, delicious and tasty macaroni and cheese. More often than not, it’s dry and bland! Don’t even get me started about boxed mac and cheese. No. Just no!!

My baked macaroni and cheese recipe has been a labor of love. I have been developing this recipe for several years now. It’s the kind of baked macaroni and cheese that is good the day of and stands up to being reheated on the next day (and the next).

I can’t stand DRY macaroni and cheese! The secret to extra creamy & cheesy baked macaroni and cheese is to make sure that you have lots and lots of cheese sauce. When you make this recipe you are going to think that you might have made mac and cheese soup instead. Trust me – those noodles soak up a lot the extra cheese!!

The tomatoes and basil round out the tangy cheesy sauce with a fresh little kiss on the tastebuds. It grounds┬áthe decadence of this dish. A fancy way of saying – it sets this shit off!

To top it all off I have added one of my favorite seasoningsSlap Ya Mama. It is spicy and tangy. It sends the taste of┬áthis baked macaroni and cheese recipe to a whole new level. Once you make it – you will crave it. Don’t say I didn’t warn you!

Ingredients
  • 16 ounces Block of Velveeta
  • 8 ounces Vermont Cheddar
  • 8 ounces Sharp Cheddar
  • 1 stick Butter
  • 8 ounces Sour Cream
  • 2 cups Whole Milk
  • 1 pint Red cherry tomatoes
  • 1 bunch Basil
  • 1 bunch Parsley
  • 1 tspn Slap Ya Momma Seasoning Optional
  • 12 ounces Large Elbow Macaroni

  1. Get all your ingredients out. I find it way easier to have everything within reach. This baked macaroni and cheese recipe goes super fast if you have it all handy.

  2. Chop all your cheeses into 1/2'" x 1/2" squares. Don't worry about making it perfect. They just need to be somewhat uniform. (Velveeta, Vermont Cheddar, and Sharp Cheddar)

  3. Add the cheese cubes to a large microwave safe mixing bowl. Cut butter into quarters and add to mixing bowl and then add milk & sour cream. I like to use a pretty big bowl. This allows the cheese mixture to spread out for easy melting.

  4. Top with Slap Ya Mama seasoning. A little goes a long way!

  5. The Slap Ya Mama seasoning is optional, however, I think it is what sets this recipe off. It turns a regular Baked Macaroni and Cheese Recipe into a flavor explosion. It has a kick so use it sparingly. I use this a lot in my cooking - it's worth having around, trust me!

  6. Preheat your oven to 350 degrees.
  7. Now it's time to microwave your cheesy deliciousness. Put the microwave safe mixing bowl in the micro for 5 minutes. I recommend doing this in 5 minute bursts. In between each 5 minute microwave session you will need thoroughly stir the cheese mixture. I can get mine done in just 2 - 5 minute intervals. Be careful - you don't want to burn the cheese.
  8. It's done when when it looks like a sauce. Mix it up! You want all the flavors to marry each other. Think smooth, creamy deliciousness.
  9. Fill a 5 qt pan with about 3 qt's of water. Add 1 tbsp of salt and bring to a boil. Add 12 ounces of large elbow macaroni. Cook for 6 minutes or follow the instructions on the package to get your noodles al dente. DO NOT OVERCOOK YOUR NOODLES! They will still be a little hard. This is okay. The cheese and oven will finish the job.
  10. Once your noodles are done put them in a colander and thoroughly rinse with cool water. This will stop the cooking of the mac noodles.
  11. Cut the cherry tomatoes into halves. Remove basil leaves from the stems and chop. Put into a 4 qt baking dish.

  12. Add your macaroni noodles on top of the tomatoes and basil.

  13. Add cheese mixture and thoroughly mix everything up. Don't worry - it's going to look a little "soupy". That's the way it needs to be! The noodles are going to soak up some of that cheese sauce. Nobody likes dry mac and cheese.

  14. Lightly sprinkle bread crumbs on top. I like to get an even "sprinkling".

  15. Bake for about 20 minutes. This brings the cheese sauce and noodles together in a very happy marriage.
  16. Chop up parsley leaves. It doesn't take much. This is just to add a bit of color and texture so your baked macaroni and cheese looks eye popping delish.

My good friend G (aka Wifey) wanted me to tell you that the orange Rachel Ray baking dish makes the baked macaroni and cheese taste better. You can't deny that it adds an eye popping splash of color. Trust me, I always serve up my OMFG! Baked Macaroni and Cheese in this pan.
