Watermelon Basil Mozzarella Salad

The first time I had this watermelon salad was on one of my many trips to NYC for New York Fashion Week. My friend Jennifer and I would fly in and work as brand ambassadors for a hair extension company. Basically, we were hair dealers. You thought all that hair going down the catwalk was real. Grrl, please!

One of our fave restaurants to eat was (and is) Elmo in Chelsea. Not only do they have a perfect Manhattan (it’s a cocktail) they have this Basil Mozzarella Watermelon Salad that will knock your socks off. Over the years it has become our thing to go to Elmo and eat this Basil Mozzarella Watermelon Salad.

I have made this several times at home – I just never wrote it down! This is truly one of my favorite things to put in my mouth. Super easy and super fresh tasting. I changed it up a bit in regards to the appearance, however, the taste remains the same – I promise!

Ingredients
  • 1/2 small Watermelon
  • 1/2 pint Yellow cherry tomatoes
  • 12 oz Fresh Mozzarella 1/3 oz Cherry Size
  • 5 springs basil leaves
  • Balsamic Vinegar to taste
  • Pine Nuts

  1. Gather all your ingredients. Duh! Here is a handy pic of what I used to make this. Don't get caught up in measurements. This is really easy and can be made according to your tastebuds.

  2. Cut the watermelon in half. I used a melon baller to scoop out the watermelon. I have to admit I am not an expert melon baller. I didn't get "balls" of watermelon, however, it did give nice even "peels" of watermelon. I just added the watermelon to the bowls as I scooped. I stopped when I had a nice watermelon base.
  3. I used a watermelon that had seeds. I think that they are juicier than the seedless. Just my personal preference. If you are in a hurry - use a seedless watermelon. It took me several minutes to get all the seeds out.
  4. Add your mozzarella balls to your salad bowls. I got about 5 - 6 mozzarella balls per salad bowl. This made 4 nice sized Basil Mozzarella Watermelon Salad's.
  5. Cut yellow cherry tomatoes in two - add to salad bowl.
  6. Chop up your basil leaves. Don't use the stems. I like to take about 6 leaves and stack them on top of each other and then slice into ribbons. Add the basil to the salad bowl.
  7. Sprinkle with pine nuts. I lightly salted the top.
  8. Dash a little bit of balsamic vinegar onto each salad. I love balsamic so I added a little more than most probably would. Be careful! It packs a punch. You can always add more if you want to.
